It is useful to be able to pass a list of `env_file`s, especially since you can pass a list of `compose_file_name`s. Builds upon #135, matching `compose_file_name`.

This PR addresses #134 and is covered by a test case. I am contributing to open source for the first time so let me know if there is anything else required to successfuly pull.
